Easy Dill Potatoes

If you’re a frequent reader, you’ll notice I love baking potatoes!  They’re a great versatile side to just about any dish.  I’m growing lots of fresh herbs in my garden this year and wanted to try out the dill on these cute little potatoes.  Colored potatoes may look a little silly, but they’re said to be rich in antioxidants and they taste just as good.


2 lbs potatoes
-a few sprigs of fresh dill, minced
-a few sprigs of fresh parsley, minced
-1 Tablespoon olive oil
-1 teaspoon salt

Cut potatoes in half, or quarter if they are on the large side.

Shake in a zip loc bag with dill, parsley, olive oil, and saltBake at 400F for 15-20 minutes, until potatoes can be easily pierced with a fork.

Serve as a side with any meal you please!  Look at all that color- love it!

    Ashley, I love the different coloured potatoes! The idea with the bag is great. I should add dill to my littl herb garden!

      Dill is great not just for potatoes but bread! This reminds me, I’ll have to make some and put it on here eventually!
