Tequila Lime Chicken

This is the most flavor-packed grilled chicken I’ve ever made.  The chicken should be marinated in the homemade, fresh tequila lime marinade for at least a half hour.  With the flavors of tequila, fresh lime juice, chopped cilantro, and garlic blended together- this chicken is perfect for grilling on a hot summery day.  Enjoy with your favorite southwestern inspired sides!


-4 Chicken Breasts
-3 Tablespoons Olive Oil
-1/4 cup of Tequila
-2 Limes, juiced
-4 Garlic Cloves, minced
-1/2 cup of Cilantro, chopped
-1 Jalapeno, diced

Juice limes into a container with the tequila and olive oil.  I heard a trick to roll the limes on a hard surface before juicing for better results- and it works!

The limes are easier to  squeeze more juice out of.

Chop cilantro, garlic, and jalapeno.

Add into container as well.

Add chicken to marinade- put in fridge for at least a half hour, but preferably 1-2 hours.

Put chicken on the grill on medium heat.

Cook until chicken is done and juices run clear.

    Great recipe. I love doing this and black beans and rice are the perfect accompaniment! I love how liberal you are with the cilantro. It’s been way too long since I did this.

    Too funny, my roommate recently requested I make tequila lime chicken. I still have a ton of tequila sitting in my freezer, since I only needed a few tbsp. for the margarita cupcakes I made. I will have to make this soon!

      Caroline- you should try it! We had a really cheap bottle of tequila we have been trying to use up (without having to drink it!) and it works perfectly for this :)

    Yumm! this looks really good. Anything with alcohol in it has my ears and add in lime and cilantro you have me drooling! Will be giving this a try for sure! Bookmarking it! thanks for sharing!

      Besides rolling limes on a hard surface, I also let them soak in some hot water for five minutes before rolling, that ways get quite a lot of juice out of them.
