Southwestern Grilled Chicken

We’ve had the perfect weather here- although a bit too hot to be cooking in the kitchen.  The grill is a perfect opportunity to keep the heat outside!  Nothing says summer like a nice kicked-up marinade for grilled chicken.  Packed full of flavor, these chicken breasts make the perfect low-effort grilling entree!


-1- 1 1/2 lbs. Chicken Breasts

-1/4 Cup Olive Oil
-3 Tablespoons Fresh Lime Juice
-2 Tablespoons Red Wine Vinegar
-2 Tablespoons Finely Chopped Onion
-1 Clove Garlic, Minced
-1/2 teaspoon Sugar
-1/2 teaspoon Dried Oregano Leaves
-1/4 teaspoon Salt
-1/4 teaspoon Freshly Ground Black Pepper
-1/8 teaspoon Ground Cumin or Taco Seasoning

Put together marinade and let chicken marinate for at least 1 hour, but preferably 3 hours.

Grill the chicken over direct medium heat, for about 4-6 minutes per side until done.

Remove from heat and serve warm.

    I’m really enjoying using lime at in my dinners at the moment, I’m going to have to give this a go while the weather is still warm.
