hi everyone you are watching quick and kosher unwrapped this is a total behind-the-scenes making-of the best holiest most delicious bread in the entire world challah and I have my great friends and I know him he's wonderful we're in Alamut kitchen and we are making holla right ladies mmm-hmm okay look alive look alive okay we start with active dry yeast okay this is 2 ounces oh you know what has us I need you to follow this is a world-famous recipe okay okay I spread my cook book the first book quick and kosher recipes you can brought in to nothing and like you don't know there's some recipes people come up with like I love this I love that there are like three recipes in this book that everyone goes I'm sick sorry guys say that everyone goes crazy over mmm I need my teeth Carla's one of them childen's another one of them will make a video for that and let's hit the honey chicken that's like huge people go crazy over those three so anyway I've adapted it since though because like I can't just like you know sit back and do it exactly as it says so we're gonna do it a little bit different so we'll sort of call out what the measurements are that I'll tell you like what I do differently okay so first I start in this recipe in the book I don't proof East but I actually do now proof East so we use two ounces of active dry yeast in a bowl so proofing it what we do here is we take about very informal like wooden spoon one or two spoonfuls of sugar put that in white sugar in the recipe I think I also use brown sugar right let's say that yeah right so I use white now I am obsessed with whole wheat things like tomorrow's a nutritionist okay so everyone makes everything whole wheat I'm totally obsessed with it but my husband likes white so I've got to make weight for him right you guys things like that so you can make oh oh okay fine yeah I'm what about you except for me you can make it a bring it over tonight Hadassah lives about two blocks away so if you're into making two batches I'll make the white for my family you're making my for your loss look at a week looks like oh wait okay so the recipe calls for six cups of water total we're using two cups to proof these you want it hot like a baby's bath so I hadn't like started making challah before I had a baby so I'm like what the heck does that mean you know so like a lukewarm so I actually have instant hot here so I do like one cup instant hot on one cup room temperature and that gets it to about the right want to touch you make it all the time you know creating it world fetch it yeah you wanna be able to touch it but you want to feel more so you how would you describe that okay we're going for the lukewarm oh yeah okay a little hot the fine we're good okay two cups in here so I'm just sort of like using the back of my spoon it's like ours to make so I feel like ours to make and I really wanna get six pounds on my own you know what I'm saying and it's like I have to make two batches but maybe you could try to put online yeah it's such a good call okay so we work this put this on the side and we just cover it with a kitchen towel and let it rise while we do the rest but I use four heaping mama tablespoons of kosher salts not regular salt kosher so this is a two tablespoon measuring thing and then I always just put it a little extra for good luck okay I take a 6-time bag right Lisa six pounds everyone always called me but I can't find a six pound bag there's five pounds there's six pounds there's seven pounds so there is a six pound bag otherwise they think it's four cups to a pound take this and I just pour it right in never I know this is it this is like it has to be just exactly like it there won't come out you don't know say yeah it's perfect you don't mess with perfection so no and bread leave over sometimes I have an extra little if it's just us for the family like you know for just for us for Shabbos and then I use it a sandwich bread during the week bread crumbs french toast I'm saying 101 things kala kugel I freeze it I'm a calico but we should do something we'll do a video for Holika go that's a good one later okay six pounds in a year what is next sugar right say that says June a half cups of brown I now use two cups of white and then plus those little two tables those are two wooden spoonfuls that I used in the M with the yeast so this goes in one cup evenly across the top and then a second cup this is like the white refined recipe right sugar flour you make a totally different for me oh yeah but you know what just as delicious well you'll taste them then you'll tell me hey okay fine okay so what's next have to remember in the East do you think my gonna get you were doing the ads we do these so now we have okay I hate cracking I only use yolks why that's cuz how she gave me the recipe and I was thinking now like I might start to experiment and try the full egg and seed useful eggs yes again how many three but I use five pounds of flour right remember that you use the full egg yes right I just use the yo can I remember someone your daughter was allergic just to the white so she called me up for this recipe she's like it's so exciting you know before is before I printed the book so we'll just take the yolk out okay so here naturally so we make a well in the middle so this is the Muslim this is gonna be our yeast that's been sweet plus we're going to add four more cups of water because it's six total so that's it okay so look so it's puffing up nicely alright Soph you got that nice little poof mm-hmm talk to me so I know we're good yeah I'm pouring okay pour that right into the well why because Pasha told me to okay next so I use this little 2 cup measuring cup and I do my 1 cup boiling a 1 cup per attempt to get 4 cups total I think the warm water helps with the rising you know so a depth of too cold is not good when you're making a collar you want it not only to have the warm water but you want to have a warm and toasty place spot in your kitchen for it to rise so that's our six cups total now the next thing we need is kernel oil I think I see three quarters of a cup there right yeah I use at least a cup for this part and more once we get to the kneading part of it this is it hands right real chef uses their hands we're just to start to knead this and pull this together a lot of people use a machine for their Carla I you know I'm like the biggest shortcut Queen right but like for Carla I said this is a time that you actually when you're kneading your call that you can like Dobbin pray for your family for your children for people that need you know a up which is you know a match and meet people that need to refer to be healed from the sick so I use this opportunity so I hardly have a chance to pray in my regular life as much as I would like so as a wonderful opportunity Erev Shabbos the day of Shabbos to just need my follow-up infuse my love and to having for the family so this starts to come together like this you don't want to over eat it's it's like I need about 10 minutes how about you oh yeah all because you have really thin arms so you need I what once we does it I always use one I use this to move the bowl and I use the second yeah and I have a whole long list of people that I pray right so I need the time I need at the time and if you make challah then you have the opportunity to participate people call you all the time we're like when you know there's really someone that needs something you know a referral honey translation he went healing yeah they get like 40 women together and everyone makes it specifically with the thought of that person in mind in a total complete recovery so you know he's one hand maybe that's one my right arm is so much stronger so and as I put in each bit of like oil I'm slowly adding the oil over the course of the 10 minutes as I do that I think about like each child and their name and what they need and obviously now that's pretty hard as I'm talking oh my kids are crazy for making Cola you do yeah yeah there's some stuff that I'm making it together with you guys so like no but this part they help me put everything in the meeting is all about like me because I can't really get involved in that but then after everyone gets their own chunk and they make shapes and decorate with crazy things like sprinkles and and chocolate chips and blue blue food coloring or whatever they want to do after just a few more minutes I let it rest for a minute or two actually no I let it rest probably up to ten minutes and then I'll just do a final need because when a rest for like those last ten minutes it becomes softer and easier to work with and more smooth we are going to put more oil on top we're gonna go crazy with the oil here okay and we're gonna let it sit disappear for one second ou can use this kitchen towel too will reuse this reduce reuse recycle coming back to it in ten minutes okay okay and we are back it's ten minutes later so we let this relax a little bit so it'll be softer and easier to work with cuz he still is like really struggling before we need more oil love you canola oil can you use vegetable oil you could but I never do I know I'm just like you know not confession time it's okay you know look at this right but if you didn't yeah absolutely vegetable not olive so look this is already so much softer and I'm going to take it press together gently flip it beautiful and now more oil Wow you're gonna taste it they're gonna love it you go somewhere and like someone so brings the chocolate chip cookies because she makes the best Delta I bring mescaline to every family occasion we take a kitchen towel back over it again so come stuff we're gonna go over on this way this is my warmest darkest coziest corner here so my ovens usually go and lay still top is usually going so this is nice and cozy we're gonna take a garbage bag pest big did you do this oh my gosh what are you doing over there oh yes for sure are they that are Canadian take it cover your call up loosely so you're taking the ends guys I'm showing you here loosely putting the ends underneath it keeps it nice and warm and toasty but you want some room for it to be able to rise it's a nice loose cover now in the book I think I say half an hour punch it down another hour punch it down another hour and then we're good to go but really lately I just do one hour punch it down one hour than sheep see you never so we're an hour into this writing process so we're taking the bag off so you're in the kitchen towel off and look at our beautiful hull it's risen so want to just boil up my hands a little bit grease up more oil again I'm gonna punch this thing down so see you go all the air bubbles that have formed as it's risen want to get rid of those so we call this a punch down gooey nice and soft this is good punch it down get up all the air bubbles just work it for like a minute or two I'm here and one more and then we flip it and we start this process again so ready take it and watch himself flip it and we are good to go here right with this thing to rise now again for one more hour towel goes back on the bag goes back on tuck it will see this guy in an hour so it's been another hour we will pull this off and take a look at our gorgeous risen college oh whoa nice and Snoopy bring this back guy that's how they look oh wow okay love it so this is when we take as I make six pounds of call us any time you make five pounds or more you have to make the broth up so is also nice I have to got it love it so keep it here very concise annihilating the middle cold on the share kitchen emits less of it see bottom left beach kala mean hi ISA I raise do fella so traditionally people burning do
