hey guys I'm hoping my kitchen midnight munchies it more i am your chef Charisse and today we are going to make a vegan cucumber bread with a vegan coconut caramel sauce drizzle bonanza on top why you getting fancy okay so if you haven't noticed making a lot of cucumber recipes cuz I've got a lot of cucumbers uh-hum Thank You Jenny and Chris by the way their garden is overflowing with cucumbers and I'm just about out of my cucumbers but then they texted and say have a whole nother second okay so I didn't know what to make after I made some of the other recipes that we already did make a lot of tongue twister but then my girl Lisbeth who did my nails let's put up a picture of her doing my nails okay they're beautiful I started messing him up because you know I'm a mess I said why don't you tablespoons of ground flax seed and to that I'm going to add two tablespoons of water and I'm also going to add a quarter of a cup of vegan oat milk unsweetened non-dairy if you haven't seen that as well so now I'm gonna take my cucumber and I literally I'm just taking her whole and I'm just gonna grate her right on in there girl we need about one heaping cup full so it's probably gonna be about this whole cucumber but you know goes out a whole bunch more my friends that's why you're getting all these cucumber babies before we get going any further I want to go ahead and premix my dry ingredients so that they're all ready to go so I have 2 cups of all-purpose flour into that I'm adding 1 teaspoon of baking powder and 1 teaspoon of a baking soda we doubled time I'm gonna have one and a half teaspoons of pumpkin pie spice now look you don't have to do pumpkin pie spice you can just do or just do cinnamon cinnamon nutmeg what I kind of really like I was gonna pretty much use all the flavors that are in a pumpkin pie spice anyways so like I just use them on a goodbye spice make my life easier but you do you know I'm Sam and I also have a pumpkin pie spice recipe in case you haven't made any on your own you can't find it in the stores and that is in quite a few of my recipes of my cookbook my econ book secret recipes from a vegan bakery that will be linked below 46 recipes avec a bunch of extra tips and tricks for vegan baking so definitely check that out so now we're gonna sit this guy's side we're gonna move on to our whole elect ingredients so I've got 1 cup of sugar and to that I'm going to add 1/2 a cup of vegetable oil I'm also going to add 1 teaspoon of vanilla and then I'm going to add our flax egg that should be nice and gelatinous it's got a thicker viscosity so we're gonna see how thick and like oh yes that is a perfect be an egg girl okay so we're just gonna whisk these up first so we're going to add our dry ingredients so what I'm gonna do is I'm actually just gonna start folding this because I don't want it to be too gelatinous like I don't want our gluten to build up too much I want it to be a nice lighter yummy sweet bread and after we get this almost mixed together alike so it's going to start folding in our cucumber because we need some more of that liquid from our flour and we're just gonna keep folding and folding and it's gonna start coming together oh my god look at her I'm so freaking excited I'm going to add some walnuts and I'm actually using black walnuts I have black walnuts the other day and this is actually what it's one of the reasons that inspired me to do this recipe now black walnuts are not normally wanted so either not black don't forget they're a little bit softer and more um a much of a bolder flavor that's actually really true it's got a lot of floral notes in it which is a lot different than the regular traditional English walnuts and I'm gonna put a lot because I just really want a lot in there um I don't particularly like black walnuts like by themselves but I think in a recipe like this those extra bold floral notes are really gonna help this recipe sing so I'm excited so now we have to put her in her pan i greased the out of her I don't want her to stay cuz I don't have a normal in metal pan I have this a beautiful one from my grandparents then we're just gonna level her out a little bit I have my oven preheated to 350 degrees Fahrenheit and we're gonna bake her for about 45 to 55 minutes until she's nice and done all the way through should I put some more nuts on top like decoration should I just I'm gonna put some more nuts on top just like a little extra hey we got walnuts in here if you allergic to tree nuts don't eat this I was watching Julia so Lomita is gluten free and vegan cinnamon roll video the other day and he was using hot for foods recipe and in there she has a recipe for a salted caramel a vegan salted caramel and I was like you know what if Jillian can make it not it up like I probably can too right so this is actually her recipe so we're gonna start one cup of coconut sugar which like don't freak out you guys like you can get it one more it's not that serious a gourd of a teaspoon of sea salt we need three tablespoons of the in butter and we also need a quarter of a cup of our homemade oat milk okay don't forget you've got midnight munchies free 10% off that will be linked below we're gonna do is we're just gonna turn on our hot plate and we're just gonna let these start hanging out and keep combining them occasionally for about seven to eight minutes until it makes a nice caramel you can certainly just eat like serve this as is super delicious but y'all know me how to do the caramel so this is actually this is how it turned out with the coconut sugar it's super dark but you can use brown sugar you can use cane sugar like very fun um you can do also you know be really good on this my vegan cream cheese icing oh my god that would be really good too so let's just go ahead and give her a nice beautiful drizzle oh my god look at how thick and luscious coconut caramel who is she Lauren Toyota who is she look at how nice dark and thick that caramel is okay she's nice and sticky icky and it we break a piece off here I want to say how this booze was like all of the different notes experiencing in my mouth anyway you got the outside is nice and like hard and crispy inside is super moist those walnuts are so soft and like that floral note that I was talking about earlier just like pops so good in this and then the sticky icky gooeyness of that so we coconut caramel sauce oh girl you need to make this and take it to a next gathering you got too many cucumbers don't worry you make it it's like almost the exact same as a zucchini bread but it's just like it's got a little bit of a different note that I can't quite make sure you guys subscribe to my channel good night kisses body wishes of
