oh well compadres I'm Hilah and I'm gonna level with you I'm hungover a y'all okay so we had a party last night for Hilah cooking two year anniversary whoa that's not how I really dance so the place is kind of a mess and I apologize but mostly the reason I'm here is because I'm really hungry and I want to make some enchiladas but I don't want to leave the house so I have to do it here and chicken enchiladas Verdes is what I'm gonna make and it's so easy you're gonna watch the video and then afterwards you're gonna be like wow that's like no problemo all right so numero uno is we gotta make a sauce so we're gonna make it app tomatillo so a lot of people have the mistaken idea that tomatillos are like a green tomato which they're not but they're a different thing so they have this little papery husk on and you can just peel that off and then there's a little bit of a sticky SAP so rinse that off to you they're actually related to gooseberries who knew now you do okay and then I'm gonna put them on my little tray here pretend like I washed that off I don't care it'll be fine and some serrano pepper and garlic and then put all this in the broiler and just kind of get it blackened and blistered okay so a few minutes under the broiler and these babies look like this like bounce all like exploded it looks like a little brain I'm gonna let that cool though for a few minutes before I try to whizz it up in the blender or else it'll explode and we're in my life meanwhile I've got chicken breasts here that I just poached and now when I shred it how I like to poach is just cover it in water just barely to cover and then um simmer it for like four minutes this is for a boneless skinless chicken breast and then turn the heat off and let it sit in the water from the five minutes and that keeps it from like getting overcooked and if you want to do like a vegetarian version of this some steamed zucchini would be great or some spinach or mushrooms those vegetables all go really well with this very sauce now I did season the water with some salt and pepper and a little bit of fresh oregano but and season after it's shredded up to the little okay this is cooled off a little bit you know plop these suckers in here and that stem out and peel my little garlic's drop them in okay and then I'm just gonna kind of stab the tomatillos too so that the whatever liquid is inside them will get out and help my blender do its whizzing business okay some cilantro stems and all whatever just shove it in and some onions some of this onion we're gonna keep for filling so well pepper what the hell let's just get crazy okay let's see if this does what I think it'll do which is explode Wow blender is tough on hung overhead okay cool no VMA all right let's make some goddamn enchiladas huh all right so this is kind of shortcut eversion compared to the one I did earlier this week with the red sauce I just soften these up by sprinkling on with some water and sticking on the microwave for 30 seconds and then kind of flipping them over and another 20 seconds or so and I'm gonna pour about half of my sauce in the bottom here and then not you know these are gonna be good a dude all right some a little bit my chicken not too much you don't want to get crazy and like stuff him and then kind of roll it up like that both brothers oh my last one you don't really have room to roll at this point so for the end I'll just kind of do this and get it you know like that like so okay and then pour the rest of the sauce over top okay and then sprinkle with cheese however much you like I'm using Monterey Jack if you're curious okay mm uh stick this in the oven just to basically just to melt the cheese you could stick in the microwave to you but my ovens already hot so I'll pay whoa look at that okay I'm gonna eat it oh dude cheesy goodness hmm oh man chicken enchiladas Verdes what's up these are guaranteed to cure what ails you and that's the truth Ruth all right well thanks everyone for two years man awesome thanks for all your support and commenting and all that stuff and also thanks to my old high school buddy Christine who suggested enchiladas Verdes so this one's for you babe all right please subscribe and I'll see you guys later you
