are you what up foodtubers jamie over here live from acne in London and we're here today to celebrate Australia day yeah a round of applause everyone so we're gonna make beautiful pie so if you talk to an Australian they're pretty serious about their pies so Australian brothers and sisters let's share the love of pies will the rest of the world on foodtube this is a great recipe beautiful stood me in the best pastry ever we're gonna make a killer Ozzie pie let's do it now first important thing this is one kilo of skirt steak here so just slice it up into sort of centimeter slice we're gonna go heavy on the black pepper like a heat teaspoon also I'm going to use about half a nutmeg just gonna grate that in so we're going to go in with a little bit of olive oil about two tablespoons goes on the meat and good pinch of salt and then we're going to massage it up so that's the first bit of flavor happening two pans really hot and we want to brown that off guys so I'm just going to wash my hands next up we're going to go put a little olive oil into a pan for nice sprigs of rosemary into the oil we're going to go straight in with 400 grams of carrots and onions so let's really caramelize these beautiful veggies here for another ten more minutes while that's happening let's cut through a little bit of DJ BBQ and Gennaro Contaldo yes rabbit oh my my now watch watch compatible yeah so boom boom boom boom Wow nice thank you very much DJ BBQ in Gennaro beautiful stuff as usual now for a nice little bit beer okay the Aussies do make a fine beer so we are going to crack into a Cooper's brewery original Pale Ale and if you love beer then click on this bottle now because we have our brothers over the road in the craft beer channel and they'll review this lovely bit amongst loads of other beers so click over have a little look and subscribe so back to the stew while this pan is or hot and it's dark right we're gonna go in with the beer about a quarter of a pint we want to get all those sticky bits off the bottom of the pan and once it's cooked away we want to thicken it up with one heaped tablespoon of flour we're going to stir that in now we want a little edge of sweetness so we love a little bit of tomato puree but I'll use a little heat tablespoon stir that in and then go in with our lovely caramelized veggies look at that sweet and gorgeous so we've built up a lovely base just go in now of about a pint of water we want to cover it with liquid there's one thing I haven't done and that's the mushrooms 200 grams into a pan I'm really pleased of that intense flavor I might just add a little bit more water and I'm going to turn it right down to a little simmer pop a lid on cook that for about hour hour and a half I've done a great little video to show you how to make the perfect cheesy pastry click the link and watch it right now okay guys so this has chilled out in the fridge for like half an hour an hour so let's make the pies I'm going to cut the pastry one 1/3 goes there get a pinch of flour and just sort of dust from a height then I tend so just roll it out we're going to always roll away from us so I'm just going to roll it about the thickness of a pound coin I want to just grab this bit here put it over the rolling pin and then just roll it up and lay it over and then very simply nice cut off the excess in half in half again then just use a knife to cut off the excess okay fill our lovely pies here look at that so these little off cuts here we can just squeeze them lightly back together again roll out just going to cut it into quarters I've got a little egg wash here you could use milk if you want that's just to stick it together get your pastry and put it on the top and again just cut the edge and then use a fork and just squeeze our fork here like this and and then use a farm full finger and forefinger okay nice big pinch like that but definitely something that you want to do just put a little cut in the top just to let the steam out so ready to rock and roll is some beautiful little pies again with the egg wash on the top around the central pipe so there you go this is going to go in the oven they're individual portions so I'll cook that for about half an hour 40 minutes 180 degrees centigrade and look at that beautiful golden rich crumbly pastry so there you go guys a homage to our Australian brothers and sisters happy Australia Day so just break into there get the pie open look at that I mean gorgeous fill in great pastry or off the car good there you go guys a wonderful homemade pie you
