hi guys today I'm going to show you how to make a no-bake mango cheesecake my dad came back from India and that's where I'm originally from if you haven't already figured that out and you brought back ten kilos of mangoes for me because mangoes are my favourite fruit so I thought I would share this recipe with you because it is delicious and mangoes are pretty prevalent in Asia this time of year so let's get started begin by crushing some digestive biscuits or any plain cookie by placing them into a ziplock bag and smashing them with a rolling pin you can also use a food processor to do this when your mixture resembles the likes of rubble pour it into an 8-inch springform pan along with four tablespoons of melted butter lightly press the mixture down as evenly as possible and then set the cake tin aside in a bowl pour in three-quarters of a cup of chilled heavy cream you want to whip this cream until you're left with some soft peaks next tumble in 300 grams or roughly eleven ounces of cream cheese when you're left with a thick boost like mass you're ready to add in your sweetness which is the white chocolate I'm melting the white chocolate in the microwave stirring after every 15 seconds for about 2 minutes until it's nice and smooth pour the chocolate into the cream cheese mixture and you want to stir it immediately so to prevent the white chocolate from seizing up now for some mango this is one and a half cups of mango pulp now I've tried this recipe with both canned and fresh pulp but I found that the canned resulted in a much better flavor we'll be adding in some fresh mango later on to Sophie or not also trickle in 2 tablespoons of lemon juice and stir until smooth to thicken this cheesecake we're using some gelatin so stir together one tablespoon of gelatin with a quarter cup of water and let the mixture bloom and thicken for about five minutes dissolve the gelatin mixture in the microwave over 15 second increments or over a stovetop over low flame stirring constantly because dissolved gelatin begins to set almost immediately we're going to add a couple of tablespoons of the Cheesecake batter to the gelatin mixture stirring constantly in order to temper it and quickly stir the tempered mixture into the of the Cheesecake batter when mangoes are in season I also like to add in a cup to a cup and a half of freshly diced mango chunks this is about the flesh of two mangoes you can also use fresh raspberries strawberries or peaches in place of the mango if you would like when the Mako chunks are well incorporated throughout the batter you can pour it atop that crust now you could leave the cheesecake as is but for a cool whimsical touch I like to take spoonfuls of the leftover mango puree that I have and dollop it across the surface of the cheesecake next using a toothpick swirl the mango pulp into the Cheesecake batter to create a cool marble effect at this stage you can pop your cheesecake into the refrigerator for a minimum of six hours or overnight to set one set run a knife through the edges of the cheesecake to loosen it up and now the moment of truth during summer and spring I like to top the Cheesecake off with some fresh flowers just before I present it it's an easy and really elegant way of presenting desserts texture wise this cheesecake is dense and creamy like a hybrid between a mousse and a pudding taste-wise hints of lemon fresh mango chunks and mango pulp make this cheesecake very refreshing this will be a definite hit at any summer gathering thank you guys so much for watching I really hope you enjoyed learning how to make the snow baked mango cheesecake and if you decide to make it don't forget to share a picture with me on my Instagram with the handle at hot chocolate hit or on my Facebook page just type in hot chocolate hit if you liked this video don't forget to give me a thumbs up and subscribe for more recipes like this and I will see you next time bye bye
