This is a classic, unfussy pumpkin pie recipe with pumpkin puree, eggs, cream, sugar and spices. We take it plain or, when feeling feisty, with a dollop of softly whipped cream.

we're adam and joanne from inspiredtaste.net and we're making our classic unfussy pumpkin pie recipe heat your oven to 425 degrees you will need enough chilled pie dough for one 9-inch pie use your favorite recipe or store-bought dough you could also check out our flaky pie crust recipe roll out the dough to fit a pie dish to prevent the dough from sticking we like to roll from the center of the dough outwards and continue to lift and turn the dough as we roll transfer the dough to the dish we just roll it around our rolling pin then gently press it down so that it lines the bottom in size just be careful not to pull and stretch the dough trim the dough to within a half inch of the dish then fold the edges of the dough underneath itself creating a thicker border that rests on the lip if you notice any areas that are a little thin use scraps to bulk it up then crimp the edges we like pressing two knuckles from one hand against our pointer finger from the other now refrigerate the crust while you make the pie filling the filling is really simple to make it start by cracking eggs and adding both granulated and brown sugar to a bowl then whisk until smooth next add some pumpkin puree you can use canned or homemade you're also going to add some heavy cream now for the spices we use ground cinnamon ginger and clove your favorite pumpkin spice blend can work here to add some salt and finally vanilla extract whisk until blended then pour the filling into the chilled pie crust then just smooth out the top bake the pie for 15 minutes then reduce the oven temperature to 375 and bake another 35 to 45 minutes the pie is done when it looks puffed shiny and set on top it should jiggle a little like jello but not much more cool the pie to room temperature as the pie cools the filling will fall a little don't worry this is supposed to happen enjoy you
