With similar flavor profiles as samosas, these veggie burgers with a twist are accompanied by a spicy mango chutney and pickled onions.
to prepare these flavorful Indian burgers first prepare your meson PLAs steamed the potatoes mince the green onions and gather the remaining ingredients along with a mango chutney to assemble the patties mix together the peas cauliflower onion powder curry powder black pepper green onions and cilantro mix to evenly distribute the ingredients and then add the potatoes using a fork break up the potatoes until the mixture looks like this the potatoes just need to be broken up enough so that the mixture holds together like this now add a bit of the ground cashews and mix to combine if desired add a bit of salt to taste depending on the moisture of the potatoes you may need to add more or less of the ground cashews at this point you may want to give it one last mix using your hands lastly taste for seasoning and if desired at a bit of cayenne pepper to cook the burgers heat the oven to 400 degrees and spray a baking tray with nonstick spray next form the mixture into patties using a round mold like this alternatively you can shape into patties using your hands but this just makes for a nicer presentation using the back of the spoon lightly press down on the surface as you lift the mold gently transfer the patties to the baking tray transfer to the oven and cook for 15 to 20 minutes or until golden on the first side then flip the burgers and transfer back into the oven for approximately 10 minutes or until both sides are golden to assemble the burgers place a dollop of mango chutney onto a bun top with a patty and your favorite condiments here we have added pickled red onions and sliced fresh jalapenos for a little extra heat
